  • 1 box of store bought pie crust
  • 8 Granny Smith apples, peeled, cored and sliced ¼-1/2 inch thick
  • ¾ C. sugar
  • 3 Tbs. brown sugar
  • 1/3 C. flour
  • 1 Tbs. lemon juice
  • 1 Tbs. almond extract
  • 1 tsp. ground cinnamon
  • Pinch of salt
  • 2 ½ Tbs. unsalted butter, cut into small pieces
  • 2 Tbs. sliced almonds

Preheat oven to 375 degrees. Combine apples with sugar, brown sugar, flour, lemon juice, almond extract, ground cinnamon and a pinch of salt in a mixing bowl. Mix well to evenly coat the apples. Let stand for 10 minutes, stirring occasionally.

Spray a pie pan with non-stick cooking spray or rub with butter. Sprinkle counter top with flour and carefully roll out both pie crusts, big enough to cover the pie pan. Place one pie crust at the bottom and make sure the edges barely pour out of the edges.

Fill pie crust with apple filling. Put the pieces of butter sprinkled evenly on top. Place the pie crust on top and pinch the edges together to close. Using a fork, poke around the top to vent. Sprinkle top with a pinch of cinnamon and sugar.
