Scrumptious Baskin-Robbins Chocolate Chip Cookie Dough Ice Cream

- Cookie Dough:
- 8 ounces (2 sticks) cool unsalted butter, cut into pieces
- 1 cup packed light brown sugar
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 2 eggs
- 2 1/4 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chocolate chips
- Ice Cream:
- 2 cups half-and-half
- 2 cups heavy cream
- 1/2 vanilla bean, split lengthwise
- 9 egg yolks
- 3/4 cup sugar
Starting with the cookie dough, put the butter into a mixture and cream until it is soft. Add the sugar and brown sugar and mix. Follow the sugars with vanilla and 1 egg and mix. Add the other egg and mix. Add baking soda, flour and salt and mix. Add the chocolate chips and mix. Roll the dough into a long thin line using your hands. Cut the dough into small slices and refrigerate.
Begin the ice cream by adding half-and-half, cream and vanilla into a saucepan over medium heat. Periodically whisk the mixture to ensure it doesn't burn. Do not let it boil. When it reaches a fast simmer, turn off the heat and let the flavors rest for 10 minutes. Combine the egg yolks and sugar in a separate bowl. Gently whisk half of the cream mixture into the egg yolk mixture. Pour the new egg-cream mixture back into the saucepan containing the rest of the cream mixture.
Heat the new mixture over medium heat and make sure to stir with a wooden spoon. When the mixture reaches 180 degrees F, quickly remove it from the heat. Take two handfuls of ice cubes and put them into the bottom of a separate bowl and add cold water. Put a smaller bowl into the ice water and pour the ice cream mixture through a sieve into the smaller bowl. Chill for 3 hours.
Freeze the mixture in an ice cream maker according to the machine's instructions. Put a new bowl into the freezer. Once the ice cream is frozen, remove the bowl from the freezer and scoop the ice cream into it. Take the chocolate chip cookie dough and fold it into the ice cream. Put ice cream in a sealable container and put it back into the freezer.
