Scrumptious Creamy Cheddar Cheese Soup Recipe

A real good recipe for those cold rainy/snow days! This recipe is really good the day after you make it. It seems the flavors blend so well and it thickens in the fridge overnight. Just take it out an hour or so before you plan to eat and heat on low until heated through. Or you can place it in a slow cooker and cook it on low for 2-4 hours or longer if needed. For my family of 6, I double this recipe. I have four young boys that LOVE this soup, they always have 2nd and 3rd bowls! I like to serve this soup with a salad and a fresh baked loaf of bread. (Sourdough bread is really good with this soup too!  I have made this recipe for several families in our church and everyone loves it and I get many requests for this recipe. I do hope that you and your family will enjoy this recipe as much as my family has enjoyed it through the years!

  • 1/4 C. butter
  • 1/2 C. chopped onion
  • 1/4 C. flour
  • 3 C. chicken broth
  • 3 C. milk
  • 1 lb. cheddar cheese, shredded

In a 3-qt. saucepan, over medium-high heat, cook onions in hot butter for 5 minutes. Stir in flour and cook 1 minute, stirring gradually. Stir in chicken broth; cook, stirring until slightly thickened. Stir in milk and heat just to boiling. Remove from heat. In covered blender, at medium speed, blend 1/4 of mixture and 1/4 of the cheddar at a time until smooth. Return to saucepan and heat just to boiling. Remove from heat.

  • I forgot to say there are many possibilities to this recipe. You could add boiled-cubed potatoes, ham-cubed and a can of peas (drained) the possibilities are endless. Give it a try, you and your family will sure enjoy this one. Make it for a friend who just had a baby or that may be under the weather or just had surgery. Or make it for someone who just moved into the neighborhood. You will truly bless them!
