Ingredients

  • 2 9-inch refrigerated pie crusts
  • 1 (10.75-oz.) condensed cream of potato soup
  • 1 (16-oz.) bag frozen mixed vegetables
  • 1/2 C. fat free milk
  • 1/2 tsp. dried thyme
  • 1/2 tsp. pepper
  • 1 egg, lightly beaten

Directions

Preheat oven to 375 degrees. Place one pie crust in a pie pan and set on a baking sheet. In a bowl, combine soup, vegetables, milk, thyme, and pepper. Spoon filling into pie crust and cover with top pie crust. Seal edges and brush with egg. Cover edges with foil. Bake for 25 to 30 minutes. Remove foil and then bake for 10 more minutes.
