  • 3 Tbs. unsalted butter
  • 1 large onion, diced
  • ½ lb. mushrooms, sliced
  • 1 Tbs. red wine vinegar
  • 1 Tbs. extra virgin olive oil
  • 1 lb. salmon filet, skinless
  • ½ tsp. garlic powder
  • 2 sheets of puff pastry
  • 1 egg, hard-boiled
  • 1 C. spinach
  • 2 C. cheddar cheese, shredded
  • 1 C. Panko bread crumbs
  • 1 Tbs. fresh parsley, minced
  • 1 Tbs. oregano
  • ¼ C. whole milk
  • Salt to taste
  • Pepper to taste

Preheat oven to 350 degrees. Heat a large skillet over medium heat and melt butter. Add onion and stir occasionally for 5 minutes. Stir in mushrooms, vinegar and spinach. Cover and let cook for 5 minutes. Stir and uncover for 1 more minute.
Set aside.

In a large skillet, heat oil over medium-high. Season salmon with salt, pepper and garlic powder. Using a fork, pull apart salmon.

Roll out puff pastry until it can fit barely over the edges in an 9-inch pie plate. Peel and crumble the hard-boiled egg to the puff pastry. Add half of the cheese and half of bread crumbs evenly across the top to separate layers. Add spinach, onion and mushrooms. Pour whole milk on top. Sprinkle oregano and parsley throughout.

Sprinkle remaining cheese and bread crumbs on top. Bake for 25-30 minutes or until the cheese is golden brown.
