Ingredients
- 1 1/4 C. coarsely ground cornmeal
- 3/4 C. all-purpose flour
- 1/4 C. granulated sugar
- 1 tsp. kosher salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/3 C. whole milk
- 1 C. buttermilk
- 2 eggs, lightly beaten
- 8 T. unsalted butter, melted

Place a 9-inch cast iron skillet into your oven and preheat it to 425°F. In a large bowl, combine cornmeal, flour, sugar, salt, baking powder, and baking soda. Pour in milk, buttermilk, and eggs. Add the butter, reserving one tablespoon for the skillet. Remove the heated skillet from the oven and reduce your oven temperature to 375°F. Use the remaining butter to grease the skillet and pour in batter. Bake for 20 minutes or until the center is firm. Let stand for 15 minutes before serving.
