  • 4 eggs, beaten
  • 3 oz. lox, roughly chopped
  • 1/4 C. chopped green onion
  • 1 tsp. dill
  • salt and pepper to taste

Heat some olive oil over low heat in a heavy skillet. Put your green onions into the skillet, then pour the beaten eggs over top. Sprinkle the chopped lox, dill, salt, and pepper over the eggs and allow to cook for a few minutes, just until the edges begin to set. Put the skillet in the oven on broil and cook until the eggs are set.
