Casseroles are an easy meal to make with simply baking in the oven for a while and servings. This recipe combines the goodness of casseroles with the freshness of vegetables from the market.

  • 1 lb. sirloin steak
  • 1 ½ tsp. salt
  • ¾ tsp. black pepper
  • 2 Tbs. butter
  • 2 golden potatoes, sliced
  • 1 zucchini, sliced
  • Vegetable cooking spray
  • 4 Tbs. butter
  • 1/3 C. Parmesan cheese, grated

Preheat the oven to 375 degrees F. Begin by first cooking the steak. Chop the steak into small chunks. Sprinkle with salt and black pepper to taste. Place 2 Tbs. of butter into a large skillet and let melt then brown. Add in the meat in a single layer. Cook one side for 30-45 seconds. Flip with a spatula and cook an additional 30-45 seconds. Cook long enough to sear the outside. Next slice up the potatoes and zucchini. In an oven-safe casserole dish, spray it with vegetable oil. Fill the dish with the potatoes, zucchini, and meat. Drizzle 2 Tbs. of melted butter over the dish, sprinkle with salt and pepper and cover with aluminum foil. Place into oven and bake for about 30 minutes. Remove foil and sprinkle with cheese. Bake for an additional 35-40 minutes or until golden brown. Let it stand for 10 minutes before serving.
