This is a recipe for spinach puffs with a twist. By garnishing these savory pastries with sesame seeds and walnuts, you’ll add a welcome crunch to this typically mushy classic.

  • 2 packages of chopped spinach, thawed
  • 1 cup feta cheese
  • 1/2 cup minced onion
  • 2 tbsolive oil
  • 2 tsp chopped dill
  • 2 tsp minced garlic
  • 4 large eggs
  • 2 sheets of frozen puff pastry. Be sure to thaw them and roll them out to two 12-inch squares.

Before you begin, preheat your oven to 400F.
First, squeeze out the excess water from your spinach until dry. You want the driest spinach possible to be sure your pastries do not become soggy.
Next, in a large mixing bowl, combine your spinach, feta, olive oil, dill, garlic, and 2 of your eggs leaving the other two for a later use. Mix these ingredients until thoroughly blended. Then, season to taste with salt and pepper.
Once your wet ingredients are mixed, cut both puff pastry squares into 3 equal strips. Reserve 2 strips for later use, then slice each remaining strip into 3 squares, leaving a total of 12. Place a square in each muffin cup.
Then, you must fill each cup with your spinach-feta mixture. Fold each corner of your pastry over the filling, pressing corners together to meet in center. Then, at the place where all four corners meet, place a large full walnut.
Before baking, beat the eggs you set aside and brush pastries with this egg wash. Then sprinkle each pastry with a pinch of sesame seeds.
Bake each muffin tray of pastries for about 25 minutes or until golden brown. Then transfer to a wire rack and allow to cool.
