  • 2 T. extra virgin olive oil
  • 1 lb. lean ground beef
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • ½ tsp. oregano
  • ½ tsp. rosemary
  • Salt and pepper to taste
  • ½ C. white wine
  • ½ stick butter
  • ¼ C. flour
  • 2 C. milk
  • 2 egg yolks, slightly beaten
  • 1 C. shredded mozzarella cheese (extra for topping)
  • Pasta sauce
  • 12 cannelloni pasta shells, cooked and drained

Heat oil in a large skillet and brown ground beef. Add in onion and garlic to saute with beef until fragrant and season with oregano, rosemary, salt, and pepper. Drain beef if ever necessary. Pour in white wine and cook until evaporated. Remove from heat and set aside. In a medium saucepan, melt butter and stir in flour until well-incorporated. Add in milk and simmer while stirring constantly until sauce begins to thicken. Remove from heat and whisk together with egg yolks. Add sauce to beef mixture and stir well while adding in mozzarella cheese. Spoon mixture into cannelloni shells, line them up in a greased 9x13 baking dish, and cover with pasta sauce and extra mozzarella. Bake for 15 minutes at 400 degrees and be sure to allow pasta to set for about 5-10 minutes once finished for everything to set up.
