  • 1 pound sea bass
  • 3 minced garlic cloves
  • 1 tablespoon olive oil
  • 1 tablespoon parsley
  • 1 teaspoon salt
  • 1 ½ teaspoon pepper
  • 1 ½ teaspoons lime zest
  • ½ cup lime juice
  • 1 lemon wedge
  • 3 ¼ cups seeded and chopped watermelon
  • 1 peeled and diced mango
  • 1 peeled, seeded and diced cucumber
  • 1 chopped red onion
  • ½ teaspoon garlic salt

Combine the lime zest, lime juice, a dash of pepper, and the sugar in a bowl and stir together. Next, add the watermelon, mango, cucumber, onion, and basil. Toss the combination. Chill the salsa while you prepare the fish. Preheat the oven to 450 degrees F. Mix together the garlic, olive oil, salt and pepper in a small dish. Rub the sea bass with the oil and garlic mixture. Bake the fish for 15 minutes, sprinkle the fish with parsley and bake for 5 more minutes. Squeeze the lemon over the fish and garnish with the wedge. Add the garlic salt to the salsa and serve with the sea bass.
