Sea Salt and Vinegar Sweet Potato Chips

- 2 sweet potatoes, washed
- 1 tsp. sea salt
- 1 Tblsp. white vinegar
- Cooking oil spray
Heat your oven to 400°. Line two baking sheets with tinfoil and spray with cooking oil.
Use a mandolin to slice the sweet potatoes as thinly as possible. Drop them into a bowl and pour the vinegar over the slices. Use your hands to toss them until every slice has been coated with vinegar.
Lay the slices out in a single layer on the baking sheet. Sprinkle lightly with sea salt and bake for 20 minutes. Check frequently to ensure that the chips are not burning and remove any that brown too much.
Cool the potato chips on a rack. They will be quite crisp once cooled. Serve with delicious homemade dip or as is.
