  • 3 C. water
  • 1 1/2 tsp. salt
  • 1 lb. uncooked medium shrimp
  • 1 lb. scallops
  • 1 pkg. couscous
  • 1/2 C. olive oil
  • 1/4 C. fresh lemon juice
  • 1/4 tsp. pepper
  • 1/4 C. chopped green onions
  • 1/2 C. sliced mushrooms
  • 1/2 C. sliced almonds

Bring water and a bit of salt to a boil. Cook the shrimp and scallops for 3 minutes until the shrimp are pink. Reserve 2 cups of cooking water and place in another saucepan. Refrigerate the drained seafood. Bring the water to a boil and remove from heat. Add the couscous and cover for 15 minutes. Fluff the couscous and cool for at least 10 minutes. Combine the oil, lemon juice, pepper, and salt in a large bowl. Put in the onions, mushrooms, almonds and couscous and stir well. Refrigerate at least 1 hour before serving.
