Seafood Chowder

If you like seafood, you will love this chowder recipe. Great anytime. Have passed this along to friends and family and everyone loves it. Very easy to prepare.

Ingredients

  • 1 lb. cod fillets
  • 1 medium onion diced
  • 2 Tbs. butter
  • 2 Tbs. flour
  • 3/4 C. water
  • 1 C. 10 oz. baby clams
  • 2 C. diced potatoes (3 medium)
  • 3 C. Half & Half or milk
  • 1 13 oz. can evaporated milk
  • 8 oz. scallops, halved
  • 1 4 1/2 oz. can shrimp, drained
  • Salt and pepper to taste
  • Chopped parsley

Directions

Cut fish into 1-inch cubes. Saute onion in butter until tender, but not brown. Stir in flour, add water, liquid from clams and potatoes. Bring to a slow boil. Cover and gently simmer 15 minutes or until potatoes are tender. Add fish, clams Half & Half, evaporated milk, scallops and shrimp. Simmer on low heat for 15 minutes. Add parsley and sprinkle paprika on top. Serve with crackers or or crusty bread.
