  • 1 diced sweet onion
  • 3 cloves garlic, minced
  • salt & black pepper, to taste
  • 1 pkg. spicy saffron rice
  • 1 C. roasted chicken, roughly chopped
  • 1 cooked smoked turkey sausage, sliced
  • 1 can tomatoes seasoned for chili
  • 1 can cream of celery soup
  • 1/2 C. sour cream
  • 2 C. shredded manchego cheese, divided
  • 1/4 C. chopped cilantro
  • 1/3 C. frozen peas
  • 12 medium raw shrimp, peeled and deveined

Preheat the oven to 350 degrees and prepare a large casserole dish. Cook the onion in a bit of olive oil for about 2 minutes. Add the garlic and cook another minute. Season with salt and pepper and add the saffron rice and the water called for from the directions. Prepare the rice according to the instructions and remove from heat. Mix the cooked rice, chicken, sausage, shrimp, tomatoes, cream of celery, sour cream, cilantro, peas, and 1 cup manchego cheese. Pour into a baking dish and bake 30 minutes. Remove from the oven and add the remaining cheese before baking another 10 minutes.
