Seafood Pie

This seafood pie is rich and very tasty. I was visiting a niece in TN, an excellent cook, who served it for lunch. I asked for the recipe and now I make this dish frequently.

Ingredients

  • 1/2 lb. each cooked shrimp and crabmeat
  • 1 6.5-oz. can artichoke hearts, diced
  • 1 C. grated cheddar cheese
  • 1/2 C. grated parmesan cheese
  • 1/2 C. sliced mushrooms
  • 1/4 C. each of bell pepper, celery, green onions, diced
  • 1/2 stick butter or margarine
  • 1 beaten egg
  • 1 Tbs. lemon juice
  • 1/2 Tbs. creole seasoning
  • 1/8 tsp. Tabasco sauce
  • 1 Tbs. mayonnaise
  • 1/4 C. slivered almonds
  • 1 deep dish pie shell, baked golden brown

Directions

Saute bell pepper, celery, green onions, and sliced mushrooms. In a large bowl, mix all ingredients except almonds. Pour mixture into baked pie shell and bake for 25 minutes at 325 degrees. Add almonds on top and bake for an additional 10 minutes.
