Seafood Saute with Kiwi

This succulent main dish can be ready in as little as 10 minutes. If you prefer, substitute 1 1/2 lb. of fish fillets for the shrimp and halibut, and nectarines, papayas or mangoes for the kiwi. So many options!

  • 2 Tbs. butter or olive oil, or 1 Tbs. of each
  • 1/2 Tbs. minced garlic
  • 3/4 lb. cleaned raw shrimp
  • 3/4 lb. halibut or other firm white fish, cut into bite-size pieces
  • 2 ripe kiwi, peeled and thinly sliced
  • 1/4 C. lemon juice
  • 2 Tbs. minced fresh parsley
  • 1/2 C. plain yogurt or sour cream (optional)
  • Lemon slices

In large skillet over medium heat, heat butter or oil. Add garlic, shrimp and fish; sauté until shrimp starts to turn pink and fish turns opaque, about 4 or 5 minutes. Push mixture to sides of pan. Add kiwi slices to pan and warm briefly. Remove pan from heat. Combine lemon juice and parsley with yogurt (if used); pour over seafood and kiwi, gently tossing to mix. Garnish with lemon slices and serve at once.
