  • 1 lb. spaghetti
  • sea salt
  • freshly ground black pepper
  • olive oil
  • 2 cloves garlic, peeled and chopped
  • 2 dried red chillies, crumbled
  • 3 C. raw prawns, peeled
  • 1/4 C. white wine
  • 2 T. sun-dried tomato puree
  • juice from 1 lemon
  • 2 handfuls arugula

Prepare pasta according to package instructions. In a large skillet, heat a few tablespoons of olive oil over medium heat. Add garlic and chillies, stirring frequently. Once the garlic begins to brown, add the prawns and saute for a minute. Stir in the white wine and tomato puree. Let mixture simmer for a few minutes. Drain the pasta, leaving a little bit of water in the bot. Combine the pasta with the sauce. Pour in lemon juice and add arugula. Toss to combine and serve immediately.
