Use your favorite kind of apples for the compote and use additional spices to season the pork to your preference. Serve the pork chops with a side of biscuits and greens.

  • Compote:
  • 1 small, sweet onion, diced fine
  • 2 small green apples, peeled, cored and diced
  • 1 Tbs. brown sugar
  • 1 Tbs. butter
  • 1/4 tsp. cinnamon
  • 1/4 tsp nutmeg
  • juice of 1 lemon
  • zest of 1 lemon
  • Chops:
  • 4 pork loin chops, bone-in
  • oil, for frying
  • salt and pepper

To make the compote, combine all the ingredients in a saucepan and cook over medium heat for 15 to 20 minutes, or until the onions and apples have softened. Keep warm until pork chops are ready.

For the pork chops, rub each side of the pork chops with a little bit of oil and season with salt and pepper. Heat a skillet over medium-high heat and sear the pork for 5 to 6 minutes on each side. Lower the heat to medium and cook until the pork is done to your preferred level. Remove for the pan and let rest for 5 minutes and serve topped with apple compote.
