  • ½ lb scallops
  • 3 T white wine vinegar
  • 1 clove pressed garlic
  • 3 T olive oil for cooking
  • 1 T mayonnaise
  • 1 tsp mustard
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • ½ C olive oil for dressing
  • ½ green bell pepper, chopped
  • Mixed salad greens
  • ½ red bell pepper, chopped
  • Salt and pepper to taste and for seasoning

First, roll washed scallops in cayenne pepper, black pepper, garlic powder, and salt. In a large skillet, heat olive oil over high heat and place scallops in the pan with their flat side down. Cook each side for about two minutes until they’re golden brown.

In a mixing bowl, combine mayonnaise, vinegar, mustard, salt, pepper, garlic powder, and cayenne pepper. Mix well, and add olive oil. Toss together the mixed greens and peppers and top with dressing. Place scallops on top of salad and serve.
