  • 3 Tbs. olive oil
  • 2 lb. sea scallops
  • 2 C. chopped onion
  • 1/2 tsp. red pepper, crushed
  • 3 garlic cloves, minced
  • 1/4 C. white wine
  • 1 C. fat-free, less-sodium chicken broth
  • 1 1/2 lb. asparagus, trimmed
  • 2 Tbs. olive oil
  • Salt and pepper to taste

Preheat oven to 500 degrees. Heat oil on a large pan over medium heat. Add scallops and cook for 2 minutes. Mix in onions, pepper and garlic for 2 minutes. Add in wine. Once evaporated, mix in broth for a cooking time of 2 minutes. In a large shallow baking pan, toss asparagus with oil, salt and pepper. Roast for 10 to 15 minutes. Before serving, place scallops over asparagus.
