Seasoned Duck

Ingredients
- 1 med. duck, cut into pieces
- 1 lg. onion + 3 cloves
- 2 sage leaves
- 1 bay leaf
- liver, heart and gizzard, finely chopped
- 1/2 C. olive oil
- 1/2 C. wine vinegar
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions
Put duck in a large pan with onion/cloves, sage, bay leaf, liver, heart and gizzard. Add oil, vinegar, salt and pepper. Cover pan with a double sheet of paper, tucking in edges of paper. Put pan cover on and cook over moderate heat for 30 minutes. When meat is done, put it in a serving dish. Strain gravy over it an serve.
