Mashed potatoes are a cult classic that everyone can get behind, and we all have our favorite variations! Chicken broth and sour cream give this fluffy side a tangy flavor twist.

Ingredients

  • 2 lbs. potatoes, peeled
  • 1 1/2 C. chicken broth
  • 1 C. milk
  • 4 T. butter
  • 1 C. cour cream
  • Chives
  • Salt and pepper to taste

Directions

After peeling the potatoes cut them into small cubes. Add them to a large pot with the chicken broth and water to cover them. Salt and cook until boiling. Then simmer on low heat for 10 minutes. Drain the potatoes and mash them by hand or with a mixer. Melt butter in a saucepan with milk. Mix evenly and add to potatoes with sour cream. Continue mixing for 2 minutes until whipped and fluffy. Top with chives and serve.
