This recipe of whole chicken adds some spice to it with various seasonings and the tasty side of yellow zucchini.

  • ½ C. butter cubed
  • 2 Tbs. dried rosemary, crushed
  • 2 Tbs. fresh parsley, minced
  • 3 garlic cloves, minced
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 whole 5-6 lb. chicken
  • 1 yellow zucchini, chopped

In a small saucepan, melt the butter. Stir in the seasoning. Place chicken breast side up on a rack in a shallow roasting pan; tie the drumsticks together with kitchen string. Spoon half of the butter mix over the chicken. Place chopped zucchini around the chicken and drizzle rest of butter mixture on vegetables. Cover and bake at 350 for 1 ½, basting every 30 minutes and cover. Uncover and bake an extra 30 minutes. Remove and cover. Let stand about 10 minutes until serving.
