This salsa is intensely hot, yet addictive and flavorful. You find find yourself craving more and more of the Serrano peppers, even though your mouth feels like it's melting apart. Perfect for junkies of hot and spicy food. This salsa is not meant for people who don't enjoy spicy food.

  • 4 lg. red tomatoes
  • 1 1/2 Serrano peppers
  • 1/4 C. olive oil
  • cilantro, optional
  • sea or kosher salt

You will need a food processor with "low" and "high" options for this recipe.

Add olive oil and peppers to food processor and process on high. Mix into an extremely thin paste. Add tomatoes to the food processor little by little. Make sure to turn the processor on low to dice the tomatoes. But you do not want the tomatoes to turn into tomato juice. Once you have a medium-thick paste, add salt as needed. After salting to your liking, you can serve topped with cilantro. You can then serve as a dip with tortilla chips.
