  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 small red serrano pepper, chopped fine
  • 1/4 C. fresh lime juice
  • pepper to taste
  • 1/4 tsp. cumin
  • 1/4 C. oil
  • 1 clove garlic, minced
  • 1/2 small red onion, thinly sliced
  • 1 tomato, diced
  • 2 Tbs. cilantro, chopped
  • 1 small cucumber, diced fine
  • 1 avocado, chopped
  • 1 lb. fresh sushi-grade salmon

In a bowl, mix the salt, sugar, and diced serrano into the lime juice and season with the pepper and cumin. Mix in the oil, onion, garlic, tomato, and cilantro. Gently stir in the salmon, cover, and refrigerate for 4 hours. When ready to serve, drain the excess liquid from the salmon, and stir in the cucumber and avocado. Let it sit for 15 minutes at room temperature before serving.
