Ingredients
- 1 16-oz. pkg. spaghetti
- 1 C. fresh orange juice
- 1/4 C. seasoned rice vinegar
- 1/4 C. soy sauce
- 1/4 creamy peanut butter
- 1 Tbs. Asian sesame oil
- 1 Tbs. grated, peeled fresh ginger
- 2 tsp. sugar
- 1/4 tsp. crushed red pepper
- 1 10-oz. bag shredded carrots
- 3 Kirby cucumbers, unpeeled and cut into 2" by 1/4" matchstick strips
- 2 green onions, trimmed and thinly sliced
- 2 Tbs. sesame seeds, toasted (optional)
- green onions for garnish
Directions
Cook pasta as label directs. Meanwhile, in medium bowl, with whisk or fork, mix orange juice, vinegar, soy sauce, peanut butter, oil, ginger, sugar and crushed red pepper until blended; set aside. Place carrots in colander; drain pasta over carrots. In large warm serving bowl, toss pasta mixture, cucumbers, sliced green onions with peanut sauce. If you like, sprinkle pasta with sesame seeds. Garnish with green onions.
