Sesame Spinach

My family really enjoys this spinach - I've been making it for several years. It's easy. I keep a small jar of toasted sesame seeds all the time so that step is eliminated.

  • 1 Tbs. sesame seeds
  • 2 Tbs. soy sauce
  • 1 Tbs. mirin or rice wine vinegar
  • 1 Tbs. vegetable oil
  • 2 tsp. sugar
  • 2 10 oz. packages fresh spinach

Cook sesame seeds in a large skillet over medium-high heat, stirring constantly, 3 minutes or until toasted. Remove from pan and cool.

Whisk together soy sauce and next 3 ingrediants; set aside. Add spinach to skillet; cover and cook over medium heat, stirring occasionally, 9 minutes or until tender. Pour soy sauce mixture over spinach and toos to coat. Sprinkle with sesame seeds.
