Ingredients

  • 1 lb. chicken breasts, skinless and boneless, diced
  • 1 red onion, diced
  • 15 oz. can white beans, drained and rinsed
  • 15 oz. can black beans, drained and rinsed
  • 15 oz. can corn, drained and rinsed
  • 4 oz. can diced green chilies
  • 28 oz. can diced tomatoes
  • ½ purple onion, diced
  • 2 C. fat free chicken broth
  • 1 Tbs. chili powder
  • 1 Tbs. cumin
  • 4 garlic cloves, minced
  • Tortilla strips

Chop up all of the ingredients that need to be chopped. Combine all of the ingredients expect the tortilla chips into the crock pot. Cover and cook on low for 6 to 8 hours. Once done, scoop into bowls, top with tortilla strips, little bit of chopped green onions, and serve.
