  • 12 ounces ground chuck
  • ½ cup minced red onion
  • ½ cup chopped yellow onion
  • ¼ cup sliced red pepper
  • 1 diced avocado
  • ½ cup sour cream
  • ½ teaspoon ground cumin
  • 9 ounces tortilla chips
  • ½ teaspoon chili powder
  • 1 can drained and rinsed pinto beans
  • 3 cups shredded cheddar cheese
  • ¼ cup chopped cilantro
  • 1 cup salsa
  • Salt and pepper to taste

First, preheat the oven to 400 degrees F. In a large skillet over medium heat, cook the ground chuck and onion. Sprinkle the meat with cumin, chili powder, and salt and pepper. Stir often and cook for 8 minutes. Transfer the mixture to a plate that is lined with paper towels. Then, line a baking sheet with aluminum foil. Lay an even layer of tortilla chips in the pan and top the chips with the meat mixture evenly. Add a layer of beans and cheese. Bake for 8 minutes. Top sheet with pepper, avocado, sour cream, and cilantro. Serve with salsa on the side.
