Shredded Pork Tacos

A Mexican-inspired dish with jalapeno peppers, olive, and garlic.

  • 3 C. shredded roast pork
  • 1 C. onion, chopped
  • 1 clove garlic, minced
  • 1 to 3 Tbs. jalapeƱos peppers, diced
  • 12 flour tortillas, warmed
  • 3 C. lettuce, shredded
  • 2 C. tomatoes, diced
  • 3/4 C. Cheddar cheese, shredded
  • Salsa

In medium nonstick skillet, cook and stir onion and garlic over medium heat 5 minutes or until soft and translucent. Add cooked pork; toss lightly. Heat thoroughly; stir in jalapeƱo pepper. On each tortilla, spoon 1/4 C. pork mixture, a portion of lettuce, tomatoes and 1 Tbs. cheese. Top with salsa.

Serves 6.
