Shredded Pork Tacos
Ingredients
- 3 C. shredded roast pork
- 1 C. onion, chopped
- 1 clove garlic, minced
- 1 to 3 Tbs. jalapeƱos peppers, diced
- 12 flour tortillas, warmed
- 3 C. lettuce, shredded
- 2 C. tomatoes, diced
- 3/4 C. Cheddar cheese, shredded
- Salsa
Directions
In medium nonstick skillet, cook and stir onion and garlic over medium heat 5 minutes or until soft and translucent. Add cooked pork; toss lightly. Heat thoroughly; stir in jalapeƱo pepper. On each tortilla, spoon 1/4 C. pork mixture, a portion of lettuce, tomatoes and 1 Tbs. cheese. Top with salsa.
Serves 6.
