If your tacos are missing that tender, juicy meat, try preparing shredded beef in a slow cooker. It's quick to prepare, and you can add any other toppings for excellent tacos.

  • 2 lb. flank steak
  • 2 red bell peppers, seeded and chopped
  • 1 large red onion, chopped
  • 1 tube cilantro, chopped
  • 2 Tbs. garlic, minced
  • 2 Tbs. chili pepper, chopped
  • 1 (15-oz.) can tomatoes, diced
  • 1/2 C. red wine vinegar
  • 1/2 tsp. ground black pepper
  • 1 Tbs. ground cumin

Add all ingredients into the slow cooker. Mix well. Cover and cook on high for 4 to 6 hours. When the meat is done, remove from the slow cooker and shred. Return the meat to the slow cooker and coat with sauce. Serve in tacos with other desired toppings.
