This shrimp and avocado salad has a tangy lemon vinaigrette which really brightens the dish. If you're tired of the usual heavy main courses for Christmas, this easy seafood salad is the way to go!

  • 1 lb shrimp, cooked & peeled
  • 2 avocados, diced
  • 1 head lettuce, shredded
  • Salt & Pepper to taste
  • 1/3 cup feta, crumbled (optional)
  • 1/2 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp minced shallot
  • 1 tsp Dijon mustard
  • 1/2 tsp grated lemon peel
  • 1/2 tsp sugar

In a large bowl, whisk together all ingredients for vinaigrette (the last six ingredients listed). Toss in shrimp and all to sit for 10 minutes at room temperature.  Add in avocado and season with salt & pepper to taste. Gently toss and serve over lettuce. Top with crumbled feta cheese, if desired.
