  • 1 large tomato, chopped into pieces
  • 2 tablespoons extra light olive oil
  • 1 medium yellow onion, peeled and sliced
  • 2 cloves garlic, minced
  • 1 medium carrot, chopped into thin pieces
  • 2 cups cauliflower florets
  • 1 cup frozen popcorn shrimp
  • 1 cup water
  • 1 tablespoon white cooking wine
  • 1 teaspoon salt
  • 1 1/2 teaspoon curry powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • A few sprinkles ground pepper

Follow package directions to cook shrimp.
In a frying pan, add onions and garlic and olive oil.
Cook on medium/high heat for about 8 minutes.
Add in cauliflower, carrots, and tomatoes and cook for 2 more minutes.
Add in water and salt and cook for another 8 minutes, while adding in the rest of the spices.
Add in shrimp and cook for another two minutes.
