Ingredients

  • 9 Oz rice.
  • 1 Tbs olive oil
  • 8 oz medium shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1/4 C water
  • 2/3 C frozen green peas
  • 1 Tbs lemon juice
  • 3/4 tsp turmeric.

Boil water in saucepan. Add rice and stir, then reduce heat, cover and simmer for 20 minutes.

Heat oil in a skillet over medium-high heat. Add shrimp and sauté for 2 minutes. Add garlic and sauté for 1 minute or until shrimp are done, then remove mix and garnish with a little oregano.

Bring 1/4 cup of water to a simmer in separate pan. Add peas, cover and cook for 2 minutes. Stir in rice, shrimp, lemon juice, and remaining turmeric, then cook for one minute and serve.
