  • (Shirmp)
  • 5 slices smoked bacon; sliced
  • 1 onion; sliced
  • 1 galic clove; minced
  • 1 lb shrimp; cleaned and peeled
  • Salt
  • Pepper
  • (Grits)
  • 5 C chicken broth
  • 1 1/2 C grits
  • 2 Tbs butter
  • 1 1/2 C grated cheddar cheese
  • 1/2 C grated parmesan cheese
  • Salt
  • Pepper

Start by cooking the grits. In a large pot, add in the chicken broth and bring it to a boil. Add in the grits, salt and pepper. Whisk well then reduce the heat to medium and let the mixture cook for 15 minutes. Stir occasionally.

Meanwhile, heat a pan over medium heat. Throw in the bacon and onions and cook tell the bacon becomes crisp and brown. Then add in the garlic, shrimp, some salt and pepper. Stir for about 2 minutes until the shrimp is cooked all the way through.

When it is done, remove from heat and set aside.

Once the grits are done cooking add in the butter and cheeses. Stir well to melt the ingredients. Taste and add more seasoning if needed.

Finally, spoon the grits into a bowl and top it off with the shrimp mixture. Enjoy!
