Ingredients

  • 1/3 lb. shrimp
  • 1/3 lb. mussels
  • 1/4 lb. red bell pepper, thinly chopped
  • 1/4 lb. peas
  • 1 lb. brown rice noodles
  • 3 tbsp. low sodium soy sauce
  • 1/3 garlic clove, chopped
  • 1 tbsp. extra virgin olive oil
  • Water

Directions

In a pan over high heat place shrimp, bell pepper, peas, garlic, and noodles
Pour olive oil and soy sauce over all ingredients
Cook for about 10 minutes. Set aside when done
Bring water to a boil in a large pot
Toss in mussels and shrimp. Cook for about 10 minutes
Combine noodle mixture, mussels, and shrimp
