  • 1/4 C. rice vinegar
  • 1 Tbs. ginger, diced
  • 4 rice paper rounds
  • 3 cups coleslaw mix
  • 4 Tbs. cilantro, chopped
  • 8 shrimp, cooked and halved

Combine vinegar and ginger in a small bowl. Fill a bowl with water and submerge each rice paper until soft and malleable. Lay the papers flat and divide coleslaw between them. Top with shrimp and cilantro. Fold in ends and roll. Cut each in half. Serve with desired sauce.
