Ingredients

  • 1/4 C. olive oil
  • 1/4 C. white wine
  • 2 Tbs. lemon juice
  • 2 Tbs. brown sugar
  • 1 Tbs. fresh rosemary
  • 2 cloves garlic, minced
  • 1 tsp. lemon zest
  • 1 lb. shrimp, peeled and deveined
  • 1/2 lb. cherry tomatoes
  • 1 onion cut into pieces
  • 2 green peppers, chopped
  • 1/2 pineapple, cubed

Directions

In a large bowl, mix the wine, oil, lemon juice and brown sugar until the sugar is dissolved
Add the herbs and mix well
Put the shrimp and vegetables into the bowl and toss to coat thoroughly
Marinate for a minimum of six hours, or overnight
Thread the shrimp and vegetables onto skewers with fresh pineapple
Heat the grill to medium high heat
Place the skewers on the grill and cook for 2 minutes
Turn and cook another minute
