A cool and refreshing summer salad that requirers no cooking and heating up the kitchen.

Ingredients

  • 12 oz. medium to large frozen cooked shrimp, thawed
  • 2 C. watermelon, seeded and chopped
  • 1 medium tomato, seeded and diced
  • 1/3 C. diced red onion
  • 1 C. chopped cilantro
  • 1 jalapeƱo, seeded and finely diced (optional)
  • 1 Tbs. olive oil
  • Juice from 1 lime
  • 1/4 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 5 to 6 oz. bag mixed spring greens

Directions

Combine cooked shrimp with next 10 ingredients. Cover and chill for 1 hour. Serve shrimp mixture chilled over spring greens.
