  • 1 lb. peeled/cleaned large raw shrimp, halved
  • 1 lg. yellow onion, diced
  • 4 med. zucchini, diced
  • 2 tsp. Garlic powder
  • 1 tsp. Cumin
  • 2 tsp. Chili powder
  • 1 16 oz. can white beans, rinsed and drained
  • 1 16 oz. can diced tomatoes, drained
  • ΒΌ C. chopped cilantro
  • 2 tsp. oil
  • Tortillas, your choice of type

Heat a skillet to med/high with the oil. Add in the shrimp, onion, zucchini and spices and cook, stirring frequently, about five minutes. Lower the heat to med/low. Add in the beans, tomatoes and cilantro and cook an additional five minutes. Spoon into tortillas and enjoy!
