Shrimp Brunch Casserole
Ingredients
- 6 eggs, hard-boiled
- 2 Tbs. mayonnaise
- 1/4 tsp. dry mustard
- 1/4 tsp. salt
- pepper, to taste
- 2 C. fresh shrimp, cooked and deveined
- 3 Tbs. butter
- 4 Tbs. flour
- 1/2 tsp. salt
- 3 C. milk
- 1/4 C. cheddar cheese, grated
- 1 C. seasoned bread crumbs
- 2 Tbs. butter, melted
- paprika
- parsley
Directions
Preheat oven to 350 degrees. Devil eggs with mayonnaise, mustard, salt, and pepper. Place in greased 7x11 inch baking dish with shrimp. Melt butter. Add flour and salt. Blend well. Add milk gradually, stirring until blended. Cook, stirring constantly until slightly thickened. Add cheese. Cook until melted. Pour sauce over eggs and shrimp. Top with seasoned bread crumbs mixed with melted butter. Bake for 35 minutes. Garnish with paprika and parsley.
