  • 1 lb. shrimp, cleaned and deveined
  • 1 small white onion, finely chopped
  • 1 large tomato, diced
  • 1/2 C. chopped fresh cilantro leaves
  • 1/4 C. fish sauce
  • 1/2 C. lime juice
  • 1 serrano pepper, chopped
  • 1/2 tsp. sea salt

Clean shrimp and boil gently in salted water for about 3 to 5 minutes until turning pink. When done, drain and set aside to cool. In a large bowl, mix in remaining ingredients and cover tightly with plastic wrap. Refrigerate for one hour.
