Shrimp Chili Mold

Ingredients
- 1 envelope unflavored gelatin
- 1 1/2 Tbs. sugar
- 1/2 tsp. salt
- 1 1/4 C. very hot water
- 1/4 C. lemon juice
- dash pepper
- 1/3 C. chili sauce
- 1 C. cooked or canned shrimp
- 2 Tbs. pickle relish
Directions
Mix unflavored gelatin, sugar, salt and pepper together thoroughly. Add very hot water and stir until gelatin is completely dissolved. Add lemon juice and chili sauce and chill until partially set. Fold in shrimp and pickle relish. Turn into a 3-cup mold, chill until firm and unmold on salad greens. Garnish with slices of tomato.
