  • 2 large squash
  • 1 quartered onion
  • ¼ cup vegetable oil
  • 1 cup water
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoons lime juice
  • 1 can coconut milk
  • 1 halved serrano chile
  • 1 ½ teaspoons curry powder
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 peeled ginger
  • Salt and pepper

Cut the squash in half lengthwise and scoop out the flesh, leaving a thin border. Blend the onion and ginger together in a food processor. Cook the mixture with the sugar, salt, and oil over medium heat. Cook for 5 minutes, stirring often. Add the curry powder and chiles. Cook and continue to stir for 2 minutes. Add the water, lime juice, coconut milk, and stir. Simmer for 8 minutes. Season the shrimp with salt and pepper and add the shrimp to the skillet. Cook for 3 minutes. Season with salt and spoon the shrimp curry into the squash shells. Serve hot.
