  • 1 ½ pounds of shrimp, peeled and deveined
  • 2 red bell pepper
  • ½ yellow bell pepper
  • ½ orange bell pepper
  • 1 red onion
  • 1 ½ tablespoons olive oil
  • 1 teaspoon salt
  • pepper to taste
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

First preheat the oven to 450 degrees. Thinly slice the bell peppers and onion. Combine the onion, bell peppers, shrimp, olive oil, spices, and salt and pepper. Toss to mix everything together. Spray a baking sheet with cooking spray and spread the spiced shrimp and vegetables on the baking sheet. Cook for 8 minutes. Set the oven to broil and cook for 2 more minutes. Serve with tortillas.
