  • 4 sweet potatoes
  • 1 tomato diced
  • 1 bell pepper
  • 1 onion
  • 3 teaspoons coconut oil
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • Salsa
  • 12 small shrimp
  • ½ teaspoon sea salt
  • ½ teaspoon minced garlic
  • ½ teaspoon paprika

Preheat the oven to 425 degrees to begin. Next, coat the sweet potatoes with 1 teaspoon of coconut oil and sprinkle them with salt and pepper. Wrap the sweet potatoes in toil foil and pierce through the foil with a knife, making small holes in the potato. Bake the potatoes for 45 minutes. Next, mix together the seasoning in a small bowl. In a medium iron skillet, use medium heat to heat 1 teaspoon of coconut oil. Then add the shrimp and fajita seasoning. Slice the peppers and onion. When done, remove the shrimp from the skillet and add the remaining coconut oil to the pan before adding the onions and peppers to the skillet. Sauté the vegetables until they are soft. After the potatoes are cooked, slice them open and stuff with shrimp, fajita peppers, tomatoes, and salsa.
