Fajitas are a traditional Mexican dish loved by all. Step away from the chicken tonight and try this shrimp and lemon fajita recipe.

4 Fajitas


  • 1 lb. shrimp, peeled and de-veined
  • 1 Tbs. oil
  • 1 onion, sliced
  • 1 clove garlic
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1/4 C. cilantro, minced
  • 1 tomato, chopped
  • 1 lime, cut into wedges
  • 4 large flour tortillas
  • salt and pepper

1) In a frying pan, heat oil until hot and add the onions and peppers. Sauté for 5 minutes. Add the garlic and cook for another 3 minutes.
2) Add the shrimp, all but two tablespoons of cilantro, and pepper to the pan. Cook for 5 minutes or until the shrimp is opaque. Season to taste with salt and pepper.
3) Lay out the tortillas and divide the shrimp mixture between them. Add the tomato and sprinkle with cilantro before serving with a wedge of lime to squeeze over the fajita.
