  • ½ tsp. ground mustard
  • ½ tsp. ginger, minced
  • 1 tsp. garlic, minced
  • 3 tsp. soy sauce
  • 2/3 C. egg substitute
  • 8 tsp. canola oil
  • 3 C. shrimp
  • 1 ½ C. green peas
  • 1 ½ C. baby carrots, chopped
  • 4 C. steamed rice
  • 6 green onions, chopped

In a small bowl, blend together mustard, ginger, garlic, and soy sauce then set aside. Heat a large skillet, spray with nonstick cooking oil, and pour in egg substitute to cook. Sprinkle with salt and pepper then cook until lightly brown. In another pan heat oil and cook shrimp, then add peas and carrots. Add steamed rice then combine with egg and soy sauce mix. Serve hot.
