Easy Cajun Shrimp Fried Rice

Ingredients

  • 2 Tbs vegetable oil
  • 1 lb andouille sausage
  • 1 onion; chopped
  • 1 red bell pepper; chopped
  • 4 garlic cloves; minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tsp Creole seasoning
  • 1 can crushed tomatoes
  • 4 C chicken broth
  • 2 C uncooked long grain rice
  • 1 lb shrimp; peeled and cleaned

Directions

Heat some oil in a pot over medium high heat. Add in the sausage and cook for 5 minutes. Stir constantly until it has browned. Remove and set aside.

Then add in the onions, bell peppers, garlic, bay leaves, thyme, creole and oregano. Stir ingredients for 5 minutes until veggies are tender and fragrant.

Add in the cooked sausages, tomatoes, broth and rice. Bring the ingredients to a boil, then reduce the heat, cover and let it simmer for about 25 minutes until the rice has cooked through.

Once the rice is done, stir in the shrimp, cover and cook for 5 more minutes until the shrimp is cooked all the way.

When it is done, transfer to a serving bowl and enjoy!
